Kale & Tofu Stir Fry


Oh MY this is lovely - as always, photo doesn't do it justice and as always it's from La Dolce Vita. The stir fry is with balsamic & chilli flakes & topped with toasted pine nuts - it's delish!!

Tofu & Veg Stir Fry with Spectacular Tahini Sauce


I didn't cook last night but went to dinner at a local Italian in Surbiton (Da Lucio on the Maple Road). I was a bit worried that I wouldn't be able to eat anything, but I phoned ahead and most of their pastas were dried so I had a few choices, which is always nice!! I had tomato & garlic bruschetta to start and then penne arrabiata - delovely!

So, here's a meal from a few weeks ago, before I started blog - what do you mean you don't take pics of your dinner?!?! Doesn't everyone!?! This is a fantastic stir fry from La Dolce Vegan - it should be garlic shoot but I just substituted the veg I had at the time so used leeks, kale, broccoli & edamame and tofu. The sauce is truly spectacular - I think it's the best way I've eaten tahini (outside of hummus!!) and you really should try it! The whole thing was served on brown rice. Mmmmm, I'm getting hungry just typing this!

Dungaree Dolly Bag


Well, I know it's not food but all her bags are vegan - I just got my new bag from Dungaree Dolly and I LOOOOOVE IT!! It's a backpack using her laptop design - and I got the purse & check book gift set too (a little silly as US checkbooks are diff size to ours but, hey, I wanted the purse!)

Now I just have to think of a reason to get the vinyl bag I also have my eye on!!! Her site is definintely worth checking out - everything comes beautifully packaged & with sweets (prob not vegan) and little notebook - it feels like my birthday!!

Pudding!


And I made Wolfies Snickickerdoos for pudding, from....you guessed it - La Dolce Vegan. They were very yummy and my neighbour loved them! I squashed them rather than make balls though cause it just seemed odd otherwise!!!

Curry Supper


I made the Everything But the Kitchen Sink curry recipe from La Dolce Vegan and had the soup as a side (very thick by now) with some brown rice - it was spicey but good!

Snack Time


Have a friend over for exercises tonight followed by supper so won't be eating till quite late & needed a little something something to keep me going! I grabbed the leftover black beans from yesterdays salad, added some capers & pine nuts & a bit more of the dressing from yesterday - it was scrum!

PS Sorry my fork keeps appearing in my pics!! What can I say? I'm eager to eat!

Cauliflower Red Lentil Soup....mmmm


Decided to make a soup to take into my first day in office in 6 years!! Have ordered a bento and tiffin box but they're not here yet so thought a flask of soup would be a good plan. After sadly burning my first attempt (Butternut Squash Ginger soup - smelt fab prior to incinerating so I will try again soon) - I made an old faithful from La Dolce Vegan - Cauliflower Red Lentil. It was delicious, though almost more of a dahl than a soup. This is fab as the recipe makes 2 large portions so am going to use the rest as a side for my dinner with a friend this eve (currently making a curry for the main so had better make this post quick in case it suffers the fate of yesterdays soup!) The pic doesn't do this justice!

Winter Salad with La Dolce Vegan Dressing




Threw veggies from the fridge together and it turned out soooooo good which prompted me finally to start a blog about what I eat as a new vegan with a borderline food obsession....




I layered the plate like so.....

Spinach Leaves
Grated carrots
Grated beetroot
Finely sliced jerusalem artichokes
Chopped celery
Black Beans
Capers
Chopped Almonds

And dressed with the dressing for Wolfies Pepporoni Pasta Salad from La Dolce Vegan by the fabulous Sarah Kramer
